Our good friend Kate over at Plumcakeandpowertools catered our launch and the food went down a treat. Kate matched six appetizers to our launch collection of teas to complement the tastings. We also had brownies, chocolate fudge, cupcakes and cookies all kindly donated by our lovely friends. The tasting menu included:
Apologies it has been a little while between posts, we’ve just been flat out keeping up with What’s that tea? post launch. However we’ve caught our breath and wanted to share with you some pictures of the fabulous afternoon our special guests had. This is Shardee Hoff, owner of What’s that Tea? and hostess with the most-est. She planned a lovely location, excellent food and of course fantastic tea tastings.

The launch collection consists of six lovely teas including some delicious versions of a few classics: English Breakfast, Russian Caravan, Chinese Green and Earl Grey as well as two special extras: Scottish Breakfast and Strawberry Champagne. All of the teas are available for sale now over at our Online Store.

Shardee gave a lovely speech in between tastings, sharing her hopes for What’s that Tea? to grow as she shares the teas she loves and thanked her supportive friends and family.

And then we drank more tea as the sun set over the stunning Sydney Harbour. A huge thank you to our fabulous hosts Tracy and Ellie and to all of our helpers on the day. We hope you’ve had a chance to try some of our tea. Oh and we promise a post detailing all of the food from the launch (with recipes) soon!
We can’t believe it’s come so quickly but the launch party for What’s that Tea? is tomorrow and we’re waiting nervously like children on Christmas eve. There are no stockings to hang by the chimney with care, however we do have beautiful seasonal floral arrangements in, what else, teapots to help set the mood for tomorrow.
We can’t wait to share What’s that Tea? with you all so remember if you aren’t in Sydney our Online Store launches tomorrow as well so everyone can try some of our amazing new range.

It’s been a late night at What’s that Tea? central as we burn the candle at both ends to get ready in time for the big launch party on Sunday. Shardee (pictured) and her helper elves had a busy night of labeling the canisters and as you can see they are looking amazing. It’s been tiring work but luckily we had a pot of Russian Caravan to sustain us into the night.

Our Strawberry & Champagne Tea makes fabulous iced tea so we thought we would share our secret recipe so that you too can always have iced tea on hand. We’ll be serving this combo at our launch on Sunday but you can mix up the fruit and herbs to make new flavour combinations.
Tea (we recommend our Strawberry & Champagne Tea)
Ice cube trays and a jar
Caster sugar (we recommend golden caster sugar)
The first two elements of the ice tea can be made in advance and they will keep in your freezer for weeks.
Add 4 teaspoons of tea to a cup of boiling water and allow to steep until cool. Strain out the tea and pour the tea concentrate into an ice cube tray and freeze.
Take a small saucepan and add a cup of caster sugar and a cup and half of water. Stir over a medium heat until the sugar is dissolved. Peel the lemon rind off the lemon in large pieces using a vegetable peeler and add to the sugar syrup and simmer for a couple of minutes. Take off the heat and allow to steep and cool. Pour the cooled syrup into a jar and pop in the freezer. Due to the high sugar content it will thicken but shouldn’t freeze completely.
Then to make ice tea you take a cube or two of the ‘tea ice’, a large spoonful of the syrup and add water, play around with the exact quantities to make the iced tea to your taste. Add mint, chopped fresh strawberries and ice for a refreshing drink.
Just a quick post today because we are super busy getting organized for Sunday’s launch of What’s that Tea? but we wanted to share with you the fabulous view our special guests can expect for the launch. Sydney is just glorious in autumn and the harbour sparkles in this particularly spectacular way against the bright blue autumnal skies so we are very excited we could secure this secret location that shows off Sydney.
